Melon Arugula Salad w/ Crispy Prosciutto

Ingredients
- various ripe melons, cut into cubes or scooped into balls
- small mozzarella balls
- fresh mint, cut into ribbons
- arugula
- equal parts lemon juice (with zest) and olive oil
- minced garlic
- salt and pepper to taste
- prosciutto de parma
Cooking Instructions

To make crispy prosciutto: Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Lay prosciutto slices on the parchment, careful not to overlap. Bake for 10-15 minutes, depending on thickness. You’ll smell it when its getting ready. Let cool – prosciutto will continue to crisp up as it cools.

To make dressing: whisk in a bowl the lemon juice, zest, olive oil, mint, garlic and salt and pepper or blend in a blender.

Toss the arugula in enough dressing to coat. Adjust to taste.
Top arugula with the melon and a few mozzarella balls and crumble prosciutto on top
Serve immediately.
