This very simple and delicious recipe is sure to be a hit for the holidays. This can easily be made vegan by substituting a plant-based butter. Maple-glazed carrots make the perfect complementary side dish.

Ingredients
- 2 small bundles of carrots (peeled, ends cut off, and cut diagonally into 3-4 pieces)
- 3 tbs. butter
- 3 tbs. maple syrup
- 1-2 cloves garlic, minced
- 1 tbs. fresh parsley, chopped
- 1 tsp. sea salt and pepper
Cooking Instructions
1. Pre-heat oven to 400°.
2. In a large sauté pan, melt vegan butter, add maple syrup and stir.
3Add garlic, salt, and pepper. Sautee for 1-2 minutes.
4. Add the carrots and stir until carrots are well coated.
5Spread glazed carrots into a single layer onto a lined baking sheet.
6. Roast for 20 minutes; stir carrots and roast for another 20 minutes, until fully cooked. Remove from oven. Garnish with parsley, salt and pepper. Serve warm.
