Aged Cheddar and Pink Lady Apple Grilled Cheese

Ingredients
- 1 1/2 T. salted butter or ghee, at room temperature
- 2 slices Sacramento Baking co. Sourdough bread
- 1 T. Pepper Jelly
- 5 pink lady apple slices
- 3 oz. Black Diamond 4.5 year sharp cheddar, shredded
- Optional: thinly sliced aged meats like prosciutto
Cooking Instructions

Heat a cast-iron or nonstick skillet over medium-low heat.

Spread the butter on one side of each slice of bread, dividing evenly. Place one slice, buttered-side down, on a clean cutting board. Spread the jam on the slice and layer half of the cheese on top( add optional meat here).

Evenly spread out the apple slices and cover with the rest of the cheese, finish with the other slice of bread butter-side up.

Using a wide spatula, place down the sandwich in the pan, cover, and cook until the bottom is nicely browned, about 4 minuets. Turn and cook until the second side is browned and the cheese is melted, about 6 to 7 minutes longer.

Cut the sandwich in half, and serve immediately.
