Apricots in a Puff Pastry Shell

Ingredients

  • 8 oz puff pastry, very cold
  • 12 apricots, cut in half
  • 1/4 c. loosely packed brown sugar
  • 2 tbsp flour
  • 1 tsp vanilla
  • 1/8 t. freshly grated nutmeg
  • 1 beaten egg, for brushing pastry
  • vanilla ice cream or fresh whipped cream (optional)

Cooking Instructions

Preheat the oven to 400°. On a lightly floured surface, roll the pastry to a 12″ square. Place on a baking sheet. Fold the edges in on all sides to form 1/2″ borders. Twist the points of the corners together and press against the baking sheet.

Toss the apricots in a bowl with the sugar, flour, vanilla and nutmeg. Arrange the fruit in rows across the pastry, keeping within the borders. Brush the pastry borders with beaten egg. Bake in the lower third of the oven for 20 to 25 minutes, or until browned and puffed.

Cool 5 minutes and serve with ice cream or whipped cream.
