Barbara's Shredded Chicken Tacos

This delicious chicken taco recipe comes from Barbara Ramirez, who worked in our Cooking School for years.

    Ingredients

    • One whole rotisserie chicken, skin removed and meat shredded
    • Coarsely chopped carrot and celery
    • 1 onion, chopped
    • 1 green bell pepper, chopped
    • 1 c. chicken broth
    • 1 Tbsp. oil
    • 1 c. Monterey jack cheese, shredded
    • Salt and pepper to taste

    Cooking Instructions

    Heat oil in skillet and add chopped onion and green pepper and sauté until softened. Add shredded chicken, heat until warm with chicken broth, and then add shredded jack cheese. Chicken filling should be hot and cheese melted when mixed together.

    Add filling into tortilla and garnish with shredded lettuce, salsa, and guacamole.
