Blue Cheese Stuffed Endive

Endive with blue cheese and walnut appetizer

    Ingredients

    • 2 heads endive, ends trimmed and leaves separated
    • 1/4 cup toasted walnuts, chopped
    • 1/4 cup dried cranberries, chopped
    • 1/3 cup blue cheese, softened
    • balsamic vinegar
    • black pepper (optional)

    Cooking Instructions

    Mix the nuts, fruit and cheese together until well blended. Using a teaspoon or mini scoop, portion dollops of the cheese mixture into the sturdy end of the endive leaves. Arrange on a platter, drizzle with vinegar.

    Blue cheese too strong for you? Substitute a fresh goat cheese!
