Blue Cheese Stuffed Endive

Ingredients
- 2 heads endive, ends trimmed and leaves separated
- 1/4 cup toasted walnuts, chopped
- 1/4 cup dried cranberries, chopped
- 1/3 cup blue cheese, softened
- balsamic vinegar
- black pepper (optional)
Cooking Instructions

Mix the nuts, fruit and cheese together until well blended. Using a teaspoon or mini scoop, portion dollops of the cheese mixture into the sturdy end of the endive leaves. Arrange on a platter, drizzle with vinegar.

Blue cheese too strong for you? Substitute a fresh goat cheese!
