Fig, Walnut and Blue Cheese Salad

Ingredients

  • 1/2 cup walnuts
  • pinch cayenne pepper
  • extra virgin olive oil
  • sea salt
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon honey 
  • 5 ounces salad greens
  • 1 cup fresh figs, quartered
  • 3 ounces blue or goat cheese, crumbled

Cooking Instructions

Preheat oven to 375°F. Toss together walnuts, cayenne, 1 tablespoon oil, and generous sprinkling of salt on a small baking sheet. Bake until golden, about 10 minutes. Set aside to cool.

Whisk together balsamic vinegar, honey, 2 tablespoons oil and about 3/4 teaspoon salt in a small bowl.

Toss together greens and figs in a large bowl and drizzle with enough dressing to lightly coat. Adjust seasonings to taste, serve on a platter or individual plates with cheese and toasted walnuts on top.
