Ingredients
- ½ cup sugar
- 1 cup water
- 1 inch piece of ginger, peeled & sliced thinly
- ¼ cup whole mint leaves
- 2 medium ripe melons (about 4 lb. total) cantaloupe, honeydew or your favorite melon.
- Garnish- Mint sprigs
Cooking Instructions
1. In a small saucepan combine sugar, water and ginger and bring to a gentle boil. Stir well to dissolve the sugar. Turn off heat and add in mint leaves. Steep for 15 minutes or longer. Strain and chill.
2. Spilt melons in half and scoop out seeds. Using a melon baller, scoop out as many even shaped melon balls as you can.
3. Place melon balls into a decorative bowl and add ginger syrup. Mix well and chill completely. Garnish each serving with fresh mint leaves.
