Roasted Kale with Mushrooms
This simple kale and mushroom sautee is a great way to add greens to your plate and is so delicious!
Ingredients
- 1 lb mushrooms, sliced
- 3 Tbsp butter
- 3 bunches of kale, stemmed and chopped
- 2 Tbps garlic, chopped
- extra virgin olive oil
- sea salt and pepper to taste
Cooking Instructions

On a sheet pan, place kale in a single layer, drizzle with olive oil, sprinkle with salt and pepper, toss until coated.

Roast at 450 degrees until crispy, about 10-15 minutes, checking every 5 minutes.

Heat a sautee pan on high heat. Coat the bottom with olive oil, melt butter and add mushrooms. Sautee until golden, about 20 minutes. Add garlic and sautee for about 2 minutes until fragrant. Add salt and pepper to taste.

Combine ingredients and serve.
