Orange Olive Oil Cake
This vegan and gluten-free olive oil cake recipe is moist, delicious easy to make!

Ingredients
- 2/3 c. olive oil
- 2/3 c. orange juice
- 2 Tbsp. orange zest
- 1 1/2 tsp. vanilla extract
- 1 tsp. apple cider vinegar
- 1/3 c. non dairy milk
- 2 1/2 c. gluten free flour mix
- 3/4 c. cane sugar
- 2 tsp. baking powder
- 1/2 tsp baking soda
- 1/4 tsp. salt
- 1 tbs. powdered sugar to top
Cooking Instructions

Preheat oven to 350* F.

In a bowl, whisk together all the dry ingredients excluding the sugar.

In a separate bowl, first mix sugar and zest until well combined; then add all wet ingredients.

Add the wet ingredients to the dry ingredients and mix well.

Line a circular baking pan, and coat with non- stick cooking spray. Pour the batter into the pan and spread evenly.

Bake for 40-45 minutes or until an inserted toothpick comes out clean. After baking, allow to cool for 10 minutes.

Run a butter knife around the edges of the pan and carefully flip the cake onto a plate. Dust top with powdered sugar and serve.
