Apollo Olive Oil Cherry Cake
  1. Preheat oven to 350°F. Mix together flour, baking powder, and salt in a large bowl. Set aside.
  2. In another bowl, beat together eggs and sugar. Add olive oil, milk, and vanilla and mix well.
  3. Mix together the dry and wet ingredients. Stir in the cherries.
  4. Pour batter into a greased 8- or 9-inch square or round cake pan. Bake for 30-40 minutes, until a toothpick inserted in the center comes out clean. Allow to cool, and dust with powdered sugar if desired.
