Apple & Pumpkin Streusel Muffins
  1. Pre-heat oven to 350° F.
  2. Combine the butter, 1/4 cup of sugar, and cinnamon and mix until crumbly; set aside. This is the streusel topping.
  3. Combine the flour, 2 cups of sugar, pumpkin pie spice, baking soda and salt in a medium bowl.
  4. In another bowl combine the eggs, canola oil and apples. Add to dry ingredients, and mix until just moistened.
  5. Scoop batter into lined (or greased) muffin cups. Top each with some of the streusel topping. Bake for 30–35 minutes
