Asparagus and Goat Cheese Crostini

  1. Preheat oven to 400°F.
  2. Brush both sides of each slice with olive oil and sprinkle top sides with salt and pepper.
  3. Toast in oven for 10–12 minutes until golden brown.
  4. Blanch asparagus spears in salted boiling water for 1 minute, remove and cut in thirds or quarters. Spread a generous amount of goat cheese on each crostini and the top with two pieces of asparagus.
  5. Place crostini on a baking sheet pan and bake in 400°F oven for 5–8 minutes to warm the cheese. Serve immediately.
