Blueberry Flax Pancakes
  1. Mix the first 3 ingredients and blend well. Heat a skillet on medium heat and add coconut oil.
  2. Place batter in the pan and then top each pancake with as many blueberries as you want. Cook pancakes until sides start to be able to be lifted up from the pan and appear lightly brown and you can see bubbles. Flip and cook the other side. Once cooked remove from heat and top with coconut whip and serve.
