Broccoli & Bacon Quiche
  1. Preheat oven to 400°F.
  2. Melt the butter in a saute pan and saute the onion and broccoli for 3-5 min. Set aside until cool.
  3. Brush pie shell with beaten egg white. Sprinkle crumbled bacon and cooled onion/broccoli mixture into pie shells. Add Swiss cheese. In a bowl, beat together eggs, cream, nutmeg, salt and pepper. Pour egg mixture on top of cheese.
  4. Bake uncovered in preheated oven until firm, about 35 to 40 minutes. Let cool at least 15 minutes before serving.
