Grilled Fennel & Citrus Pork Tenderloin
Serve with whole wheat couscous and sautéed baby spinach for a tasty Mediterranean meal!

  1. Preheat grill to medium high heat (about 400oF).
  2. Season pork generously with salt and pepper. Brush on the Dijon mustard and coat with the fennel and citrus zest.
  3. Grill pork for 20-30 minutes to 150oF. Once meat is ready remove from grill, tent with foil and allow to rest 5 minutes before slicing.
  4. Garnish with chopped parsley and serve.
