Harvest Salad with Asian Pears, Pumpkin Seeds and Goat Cheese
extra virgin olive oil
fresh lemon juice
Freshly ground pepper
mix baby greens
peeled, cored, and very thinly sliced on a mandoline, cores discarded
salted roasted pumpkin seeds
fresh goat cheese
In a small bowl, whisk the olive oil with the lemon juice, honey, and chopped thyme. Season with salt and pepper.
In a large bowl, toss the greens with the pear slices and pumpkin seeds. Add the dressing and toss well. Top with the crumbled goat cheese and serve.
