Lemon Baked Tofu
firm or extra firm
salt and pepper
Slice tofu into 1⁄2 inch thick strips.
Whisk together all ingredients except for tofu.
Add mixture to a bag or shallow pan and add tofu slices.
Marinate tofu for at least an hour.
Heat oven to 375°F.
Transfer tofu and marinade to a baking dish, bake 20-25 minutes.
Turn tofu over halfway through (at about 10 minutes), and baste tofu as needed.
Continue baking until tofu is firm to the touch and a golden brown color.
Serve with Sautéed Swiss Chard.
