Lemon Baked Tofu
  1. Slice tofu into 1⁄2 inch thick strips.
  2. Whisk together all ingredients except for tofu.
  3. Add mixture to a bag or shallow pan and add tofu slices.
  4. Marinate tofu for at least an hour.
  5. Heat oven to 375°F.
  6. Transfer tofu and marinade to a baking dish, bake 20-25 minutes.
  7. Turn tofu over halfway through (at about 10 minutes), and baste tofu as needed.
  8. Continue baking until tofu is firm to the touch and a golden brown color.
  9. Serve with Sautéed Swiss Chard.
