One Pot Pasta Fagioli with Chard and Turkey Sausage

  1. In a large Dutch oven heat 1-2 tablespoons of oil over medium high heat. Add turkey sausage and brown for 4-5 minutes, stirring occasionally. Add the chopped onion and cook for 2 more minutes. Add the garlic and cook until the sausage is nicely browned.
  2. Add the broth, carrot, bay leaf, oregano, and thyme. Bring to a boil, reduce heat and simmer for 20 minutes. Add the uncooked pasta and simmer for 10 more minutes. Add the beans and chopped chard and simmer for 5-10 more minutes.
  3. Remove the bay leaf, taste and adjust the seasonings, adding salt and pepper at the end of cooking to taste. Serve in warmed bowls and top with grated cheese. Best served with slices of hot crusty bread.
