Strawberry Lemonade
  1. Make a honey strawberry simple syrup: In a medium sized sauce pan, combine honey and 1 cup of water. Place over medium heat and stir until the honey has dissolved into the water. Raise the heat to medium high, stir in strawberries and bring to a simmer. Simmer for 3-4 minutes or until the strawberries start to break down. Carefully strain the strawberry mixture through a fine mesh strainer and let cool to room temperature. Use immediately or store in the fridge for up to a week in a closed container
  2. This makes enough for two large pitchers. Mix together lemon juice, remaining water or sparkling water, and the simple syrup. Chill until ready to use. Serve over ice.
