Roasted Balsamic Brussels Sprouts

Ingredients
- 2 lb Brussels sprouts, trimmed and cut in half or quarters
- 1/2 red onion, sliced
- 1 1/2 tsp. Dijon Mustard
- 2 Tbsp. maple syrup
- 2 Tbsp. olive oil
- 2 tsp. sea salt
- 2 Tbsp. balsamic vinegar

Preheat oven to 350°.

Mix all of the ingredients in a large bowl.

Spread on a baking sheet and roast until tender, about 20 minutes. When cool enough to handle, adjust seasoning to taste and serve immediately.
