Turkey Soup with Rice

Ingredients
- 2 quarts Turkey stock
- 1 large onion, chopped
- 2 carrots, chopped
- 2-3 ribs celery, chopped
- Olive oil or butter
- A few sprigs fresh parsley leaves, chopped
- 2 cloves garlic, minced
- 2 teaspoons poultry seasoning (more to taste), or a combination of ground sage, thyme, marjoram, and/or a bouillon cube
- 2 to 4 cups leftover chopped or shredded cooked turkey meat
- 1 cup wild rice blend
Cooking Instructions

Heat the butter or olive oil in a large pot or Dutch oven medium, heat. Sauté the onion, carrots and celery until the onions are translucent and softened.

Add the garlic, cook for 1-2 minutes more and then add the stock to the pot. Add the poultry seasonings and some salt and pepper.

Bring to a simmer and add the rice. Cook for 15-20 minutes more until the rice is cooked through.

Add the turkey meat and cook until heated through. Taste and adjust the seasonings, adding more if necessary and simmering for a few minutes longer.
