Turkey Soup with Rice

    Ingredients

    • 2 quarts Turkey stock
    • 1 large onion, chopped
    • 2 carrots, chopped
    • 2-3 ribs celery, chopped
    • Olive oil or butter
    • A few sprigs fresh parsley leaves, chopped
    • 2 cloves garlic, minced
    • 2 teaspoons poultry seasoning (more to taste), or a combination of ground sage, thyme, marjoram, and/or a bouillon cube
    • 2 to 4 cups leftover chopped or shredded cooked turkey meat
    • 1 cup wild rice blend

    Cooking Instructions

    Heat the butter or olive oil in a large pot or Dutch oven medium, heat. Sauté the onion, carrots and celery until the onions are translucent and softened.

    Add the garlic, cook for 1-2 minutes more and then add the stock to the pot. Add the poultry seasonings and some salt and pepper.

    Bring to a simmer and add the rice. Cook for 15-20 minutes more until the rice is cooked through.

    Add the turkey meat and cook until heated through. Taste and adjust the seasonings, adding more if necessary and simmering for a few minutes longer.
