Vegan “Chicken” Salad

Ingredients
- 2 cans of chickpeas, peeled for a smoother texture
- 1/4 finely diced onion
- 1 large diced red tomatoes
- 2 cloves grated garlic
- 1/8 cup fresh cilantro
- 6 leaves of basil, cut into ribbons
- juice and zest of 1/2 a lime
- 1/2 cup of vegan mayo
- 1/2 tbs. Dijon mustard
- 1 whole avocado, cut into cubes
- sea salt and freshly cracked black pepper to taste
- 2 tbs. nutritional yeast
- 1 tsp. smoked paprika
Cooking Instructions

In a large mixing bowl gently crush chickpeas using a potato masher, leaving some large pieces for added texture.

Add remaining ingredients to the bowl and mix until well combined. Adjust seasoning to taste and enjoy!
