Vegan “Chicken” Salad

A vegan salad made with chickpeas, onions, tomatoes and garlic.

  • Note:Prep time will be around 30 minutes if you are not peeling the chickpeas.

Ingredients

  • 2 cans of chickpeas, peeled for a smoother texture
  • 1/4 finely diced onion
  • 1 large diced red tomatoes
  • 2 cloves grated garlic
  • 1/8 cup fresh cilantro
  • 6 leaves of basil, cut into ribbons
  • juice and zest of 1/2 a lime
  • 1/2 cup of vegan mayo
  • 1/2 tbs. Dijon mustard
  • 1 whole avocado, cut into cubes
  • sea salt and freshly cracked black pepper to taste
  • 2 tbs. nutritional yeast
  • 1 tsp. smoked paprika

Cooking Instructions

In a large mixing bowl gently crush chickpeas using a potato masher, leaving some large pieces for added texture.

Add remaining ingredients to the bowl and mix until well combined. Adjust seasoning to taste and enjoy!
