Red, White and Blue New Potato Salad

    Ingredients

    • 3 lb. assorted new red, white and blue potatoes, cut into large bite size pieces
    • 1/3 c. finely chopped red onion
    • 3 T. chopped fresh parsley
    • 1 ½  t. dried dill
    • 2 T. chopped fresh chives
    • 4 hard-cooked large eggs, finely chopped (optional)
    • 1/3 c. red wine vinegar
    • 4 T. olive oil
    • 2 t. salt
    • 2 T. Dijon mustard
    • 1 t. freshly ground black pepper
    • 2 garlic cloves, minced

    Cooking Instructions

    Place white and red potatoes in one saucepan and the blue potatoes in another and cover with water and bring to a boil. Reduce heat and simmer for 10 minutes or until fork tender.  Drain potatoes and cool slightly.

    In a large bowl, place potatoes, onion, parsley, dill, chives and eggs and toss gently.

    In a small bowl, combine vinegar, oil, salt, mustard, pepper and garlic and whisk to combine.  Pour over potato mixture and toss gently.  Taste and adjust seasoning.
    Serve warm immediately or refrigerate and serve chilled.
