Ingredients
- 3 lb. seedless watermelon, rind removed, cut into 1-inch chunks
- Juice and zest of 1-2 lemons or limes
- 1/4 c. mint leaves, cut into ribbons
- 3 Tbsp extra-virgin olive oil, plus more for drizzling
- sea salt and freshly ground black pepper
- 4 oz. high quality feta cheese
- 4 oz. arugula leaves (optional)
Cooking Instructions
1In a mixing bowl, gently toss together all of the ingredients except half of the zest and the cheese. Adjust seasoning to taste keeping in mind that the cheese will add saltiness.
2Place in a serving bowl and top with crumbled cheese, remaining zest, a drizzle of olive oil and some freshly ground pepper. Serve immediately.
