Blistered Shishito Pepper Crema

    Ingredients

    • 1 pint or about 1/2 lb Shishito Peppers
    • 3 cloves peeled garlic
    • 3 limes zested and juiced
    • 1/2 tsp. cumin
    • 1 bunch green onion
    • 1 bunch cilantro
    • 1 Tbsp olive oil
    • 3 Tbsp sour cream
    • salt and pepper to taste

    Cooking Instructions

    1. Pour 1 tablespoon olive oil in a heavy skillet over medium-high heat. Add the peppers and sauté about 3-5 minutes, turning occasionally until they blister on all sides.

    2. Remove peppers from heat and slice off the stems and discard.

    3. In a blender, combine remaining ingredients except for sour cream. Pulse until desired consistency then add in sour cream. Taste and adjust seasoning as desired. Makes about 1/2 cup of sauce.
