Summer Corn Salad

Ingredients
- 3 c. corn kernels from about 4 ears of corn, cooked in salted water
- 1/4 c. fresh herbs of your choice (parsley, mint, basil), cut into ribbons
- 3 Tbsp lemon or lime juice and zest
- 1 c. diced zucchini
- 1 c. diced tomatoes
- 3 cloves garlic, minced
- 1/4 c. olive oil
- 1/4 c. white wine vinegar
- sea salt and pepper to taste
Cooking Instructions

In a large mixing bowl, toss all ingredients together and adjust to taste. Optional serving suggestions: add feta, cotija, black beans, avocado and serve on a bed of lettuce or eat with a chip as a dip!
