Heirloom Tomato Bruschetta

    Ingredients

    • 1 1/2 lbs tomatoes, cored and diced
    • 1/4 cup pitted Kalamata olives, finely chopped
    • 2 teaspoons balsamic vinegar
    • 1/4 cup finely chopped fresh basil
    • 1/4 teaspoon salt
    • A few grinds freshly ground black pepper
    • 1/3 cup extra-virgin olive oil
    • Bruschettini Toasts

    Cooking Instructions

    1. In a medium bowl, combine the tomatoes, olives, balsamic vinegar, basil, salt, pepper, and the oil. Toss to combine, then taste and adjust seasoning, if necessary.

    2. Top the bruschettini toasts with tomato mixture and enjoy!
