Mango Salad w/ Watermelon Daikon and Cilantro

Ingredients

  • 1 mango, seeded and diced
  • 1/4 c. spring onion, sliced
  • 1 1/2 c. bull’s blood microgreens
  • A handful of macadamia nuts
  • 2 Tbsp. roughly chopped cilantro
  • 1 medium jalapeno, diced
  • 1 medium watermelon daikon, thinly sliced
  • juice of 1 lime
  • 1 Tbsp. olive oil
  • sea salt and pepper to taste

Cooking Instructions

1. Gently toss all ingredients together. Adjust seasoning to taste.
